My return home is finally in sight. I'm planning on leaving Albuquerque March 1st. It'll probably be a week or two after that till I will re-open due to some updates to my cart (electrical upgrade, second fridge, and extra storage.) These updates will allow me to expand my menu as I will be adding a couple of breakfast options and a couple of salads. Breakfast will consist of pancakes topped with fruit, and/or a tofu scramble with mixed vegetables, potatoes, and black beans topped with green chile salsa and cilantro lemon sauce. The first salad will consist of spinach, black beans, guacamole, corn, and cherry tomatoes in a balsamic dressing. The second, will be mixed greens sliced apples, red bell peppers, almonds, red cabbage, and carrots in a sesame dressing. I'm also thinking about adding a new dowl to the list as well but I haven't settled on anything yet.
